Fish meals of Kenigsberg.
There were plenty of fish in Baltic sea during Medieval times. There was a legend that if you put a basket in the sea it will be full of variety of fish such as eel,salmon and etc. The interesting fact is that one professor of Kenigsberg even mentioned about some swordfish in our sea. The amount of salmon was numerous so it was allowed to sell it only twice a week. So the Kenigsberg cuisine includes over 10 fish meals. The most famous of them are ruff soup,german sea and fish in beer.
Whats more there was a restaurant “to Cat” in Burgschtarse street( Proletarskaya) where these meals were cooked very tasty.
So for ruff soup you need the following ingredients:

-500 g of ruff
-1,25 liters of water
-celery
-parsley
-some carrot
-bay leaf
-onion
-four pieces of pimento
-cloves
-salt
-2 tablespoons of butter’
-flour
-sour
-lemon
-2 yolks


 The recipe of German sea.
-scale fish
-cut off head and tail
-put the vegetables,salt and spices in the boiled water,then add a back part of the fish
-boil 30 min
-then strain through a small sieve
-add butter,yolks and pepper

Fish in beer.
You need to mix one liter of dark beer with water,then you have to boil fish in this liquid about 25 min. Then add salt,pepper,parsley, flour and some honey-cakes.
